The green leaves of thyme have a powerful, aromatic flavor and strong antioxidant action because of the volatile oils and plant compounds they contain. The most important of these is thymol oil. Experiment on this oil has found it can boost the effects of healthy Omega 3 fats on the body, for example, the Omega-3 DHA found in fish oils, which has been shown to be important for healthy brain function. The oils in thyme are strongly antibacterial and can protect against food poisoning bugs such as E.coli, bacillus, and staphylococcus. Finally they are rich in flavonoids, which protect us against the disease of aging, and they are a good source of vitamin C and iron.
